It’s amazing how many people who consider themselves pretty educated in the world of espresso still tamp their coffee while balancing their portafilter on the counter. Besides being damaging to your portafilter spouts, this technique lends itself to sloppy tamping. Let me acquaint you with one of my good friends, the tamping stand.
